Guacamole is one of the most delicious uses of avocado, and a typical dish of Mexican cuisine. It is so good that it has caught on abroad, becoming the undisputed star of many Latin American-themed dinners. We want to teach you how to make this at home, to serve with tacos or with Mexican tortillas. It is excellent as an accompaniment both meat and fish dishes, and will undoubtedly become a regular part of your buffet meals with friends.
Peel the avocado and mash into a pulp with a mortar. Separately, very finely chop the tomatoes, onion, fresh coriander (you can substitute parsley) and chilli. Add everything to the avocado and pound again. Add the lime zest (you can substitute lemon) with its juice and the paprika. Season with salt and pepper. Finish with a drizzle of extra virgin olive oil.
