Meat is a food of animal origin, essentially divided into white and red by type, and is part of the human diet due to its richness in proteins, some mineral salts, lipids and, to a lesser extent, also some carbohydrates. Meat can be prepared according to the seasons and traditions by grilling, boiling, cooking in the oven or in a pan, each of which is characterized by the ability to give a different consistency and a certain exaltation of flavours.

Meat can be preserved in many different ways: through salting, or alternatively, through freezing.

According to some recent statistics, meat consumption in Italy has gone from 30 kg per year, in the early 1950s, to the current 85 kg per person.
