Verona radicchio

Verona radicchio has a red color very similar to that typical of Treviso radicchio: unlike the latter, however, the Verona variety is characterized by a spherical shape. Of the Radicchio di Verona there are essentially the early variety (which generally ripens during the month of October) and the late variety, which instead reaches maturation during the month of February. It is very important to pay attention to the consistency of the leaves when purchasing Verona radicchio: they must not be too rich in water or dry, since in both cases you would find yourself faced with a product that is absolutely not fresh.

Use in cooking

Verona radicchio is generally used to create salads, as well as to prepare pinzimonio, or first courses based on both pasta and rice.

Preservation

Verona radicchio can be stored in the refrigerator for about five days, taking care to wrap it in breathable packaging.

Curiosity

Verona radicchio was grown in the past by inserting it between different rows of vines, or even in orchards, or finally even next to wheat fields.
