Dress the fennel with the orange juice and segments, then add salt, pepper and extra virgin olive oil

Tips
When you peel the orange, take care to remove all the ‘pith’, or the white part of the peel. If you leave it attached to the flesh your salad won’t look so nice and will above all be rather bitter.
Trivia
Fennel are usually separated into male and female varieties: males are more rounded and less fibrous, therefore ideal for eating raw; the female varieties are rather more elongated and more fibrous, perfect for cooking. It is a distinction based on common folklore: science does not give any input!
