To clean mussel shells quickly and thoroughly, use the steel scouring pads commonly used to clean pots and pans. Mussels are found in fishmongers throughout the year but the period from May to September is the best time to buy and eat this mollusc. When buying them, check that their colour is clear and bright. Also buy locally for the best flavour.

For health reasons, mussels should be eaten cooked; damaged mussels produce a very dangerous toxin which is killed only through proper cooking; ingestion of this toxin could in extreme cases lead to death.
