Of all the vegetables that accompany a meat or fish course, the potato. It can be prepared in many ways, but what we offer in this recipe will leave you speechless! As well as being delicious, the potatoes are used to make a really spectacular dish that, in the end, becomes a meal in itself be enjoyed with friends and relatives. To prepare these stuffed potatoes you need quite a lot of medium to large sized potatoes, and then fill them with a great filling consisting of minced pork, red onion, parsley, parmesan cheese, salt and pepper. The end result is wonderfully delicious and will only take about thirty minutes to make. These stuffed potatoes are sure to be snapped up and will appeal especially to children!

Preparation

In a bowl, mix the ground meat with salt, half a red onion, some ground pepper, fresh parsley and the grated Parmesan. Cut the top off the potatoes and with a teaspoon scoop out the inside. Cook the hollowed out potato in boiling water for about five minutes. In a frying pan cook the filling for two minutes. Then, with a teaspoon, fill the potatoes and place them on a baking dish. Bake for about 30 minutes at 180 °C.

We suggest you also try a variation of this recipe, replacing the ground beef with some good quality ham.
Trivia
The potato contains several toxins especially in any green parts, and in its flowers and buds. Many of the toxins might be concentrated in the skin so scrub them well and if you are concerned about any green colouring, it is worth peeling them.
