Chilli paste is a very common condiment in the southern Italian regions and, in particular, in Sicily and Calabria: the cuisines of both regions, in fact, make extensive use of this condiment, both to prepare tasty first courses, as well as rest, both to give an extra touch of flavor to tasty aperitifs, with that aroma and strong flavor typical of chilli pepper. Originally, chilli pepper paste was created to make the simple dishes typical of the gastronomic tradition of rural areas more substantial and appetising: at the base of this paste, there have always been three traditional ingredients, namely chilli peppers, garlic and, finally, the inevitable oil.

Use in cooking

Chilli paste is a specialty of southern Italy and, as such, is perfect for accompanying pasta-based first courses, as well as for creating delicious aperitifs.

Preservation

Chilli paste should be stored in specially sterilized jars, which can be placed in the cellar or in a cool, dark and dry place.

Chilli paste is considered a typical specialty of the regions of Southern Italy and, in particular, of Calabria.
