Andalusian Cake

⏱ 60 min👤 6 pp★★★☆☆

In the heart of a summer afternoon, when the scent of citrus fills the air and the sun illuminates the orchards, the Andalusian Cake presents itself as the perfect dessert to brighten up the table. This sweet treat, with its crumbly texture and the sweet flavor of apples, stands out for its simplicity and refreshing character, making it ideal for warm Spanish days. The preparation begins with a dough of egg yolks, sugar, and butter, worked by hand until a sandy pastry is achieved, which is then enriched with grated orange zest, a touch of freshness that enhances the flavor of the dessert. Cooking the apples with sugar until a soft and compact consistency is reached is a crucial step that gives the filling a enveloping sweetness, perfectly balanced by the slight acidity of the citrus. Although the Andalusian Cake has its roots in Spanish tradition, its popularity has crossed borders, finding a place in Italian kitchens as well, where it is often prepared for special occasions like birthday parties or family lunches. In some local variations, apricots or lemon can be added for an extra layer of flavor, making each bite a unique experience. Served warm, perhaps accompanied by a scoop of vanilla ice cream or a sprinkle of whipped cream, the Andalusian Cake becomes the perfect ally for a dessert that delights everyone, from the youngest to the adults, turning every meal into a moment of sweetness and sharing.

Preparation

Mix in a mixing bowl the egg yolk, sugar, flour, and butter. Work the dough by hand until it takes on a sandy appearance. Add water and grated orange zest, making the dough homogeneous and letting it rest. Meanwhile, cook the apples with sugar until a compact mixture is obtained. Roll out the dough in a baking dish and place it in the oven for about 10 minutes. At this point, add the cooked fruit on top of the dough and return to the oven for 10-15 minutes, until both the dough and the fruit are golden. Allow to cool slightly, peel the oranges, slice them into thin rounds, and arrange them on the cake. Boil the apricot jam with lemon juice and water for a few minutes; then pour it over the cake.

Tips
To achieve a truly delicious cake, make sure to use ripe and sweet apples, so that the fruit can caramelize well during baking and give a rich flavor to the cake.
