Barley with seafood

Preparation

Soak the barley the evening before. The next day rinse the barley and boil in water for 1 hour with a little salt. Shell the prawns and remove their intestines. Clean the squid and cut into small pieces. Clean the mussels thoroughly. Take a large frying pan and gently brown the garlic and parsley in some extra virgin olive oil. Add the seafood, heat for a few moments, then add a little white wine and reduce. Add the tomatoes, adjust the salt (only a little) and add the mussels. After a few moments add the cooked barley. Let it simmer for another 10 minutes, then add some pepper and parsley. Serve.

Adjust the quantity of liquid so as to get, according to taste, either a soup-like consistency or something drier

You can buy barley wholemeal, hulled, pearled or pre-cooked - different varieties that require different types of cooking
