Among the specialties that make Middle Eastern cuisine great and rich in variety, there is certainly also burgur: the latter is prepared from durum wheat grains which are then subjected to steam cooking, a subsequent drying and, ultimately, also a grinding process. One of the most appreciated characteristics of burgur is the high fiber content - a peculiarity increasingly sought after in the present - as well as the richness of precious mineral salts and, finally, the good concentration of vitamin B. One of the most famous recipes within of which the burgur reigns supreme, is certainly the tabbouleh.
