Monte Veronese cheese is a high quality Venetian specialty, which has also obtained the declaration of Protected Designation of Origin at European level, and undoubtedly represents one of the most noteworthy mountain dairy products in Italy. From a historical point of view, this cheese was prepared for the first time during the thirteenth century by some German colonists. Depending on the level of maturation, which can be at least 25 days, Monte Veronese cheese has different labels and names: in the case of maturation for up to 6 months, it is called mezzano and, finally, in the case in which it is matured for two years, he is called old.
Use in cooking
Monte Veronese cheese can be enjoyed both on its own and in rice-based first courses or even stuffed pasta, where it creates an interesting combination of flavours.
Preservation
Monte Veronese cheese must be stored in a cool, dry cellar or, alternatively, inside a refrigerator.
