In the past, when it was not possible to preserve perishable foods for a long time due to the absence of advanced technological means, we had to make use of some effective cooking techniques to be able to consume important fruit and vegetables outside of their seasons: thus preserves were born , which as the name itself tells us, served as solutions to be able to eat certain products of the earth even at times of the year when they were not available. Even today, although for other reasons, it is usual to prepare preserves based on some particular fruits and vegetables, such as tomatoes, cherries and peppers: in reality, in every Italian region there are many different types of preserves, which however, in principle they involve boiling the main ingredients, in order to then put them in vacuum-packed jars.
