Noodles are an ancient and very common dish throughout the world. It is a gastronomic specialty of Asian and oriental cuisine, which in some ways recalls our spaghetti or linguine. Around the world, depending on different cultures, various types are found; we range from rice noodles, very thin, white and usually pre-cooked, to egg noodles from China or Japan, up to ramen, instant noodles, udon noodles, which like rice noodles must be soaked, and Thai noodles. Today we also wanted to prepare a recipe with noodles, using beef broth and excellent seasonal vegetables.

Prepare a meat broth with good chicken meat. Also add some celery, carrot, spring onion and grated ginger. Then add the mushrooms and pak choi or chard. When everything is well flavored, add a couple of spoons of soy sauce and the noodles. When the noodles are cooked, serve with a few strings of raw spring onion for garnish.

Noodles can be prepared in many different ways. Think about it, they come from China, and they were invented long before we Italians invented spaghetti. That said, with a package of noodles and a few other ingredients, you can create a dish that is complete from a nutritional standpoint and at the same time very tasty. The ideal way to do this is to prepare noodles in broth with chicken and vegetables. Make a classic chicken broth but add some fresh scallions and a small piece of ginger. You will get a delicious Chinese broth.
To prepare noodles in broth with soy sauce, sauté zucchini and carrot in a pan. Then deglaze with soy sauce, which will add flavor and intensity to your base. Next, add the other ingredients: scallions, fresh ginger, vegetable broth. Cover and let it all infuse well. At this point, you can add your noodles. Another vegetable ingredient that works very well with these ingredients and this type of broth is pak choi or Chinese cabbage. A plant that resembles our Swiss chard a lot. In this regard, if you want to add a green note to your noodles in broth, you can use some baby chard. The important thing is to choose the small ones, which are more tender and sweeter.
Another tasty idea we give you is noodles in broth with shrimp. Noodles in broth pair very well with shrimp, which give the broth a decidedly pleasant marine touch. Many people actually prefer this type of broth over the exclusively vegetable-based one. To prepare it, clean the shrimp and use the heads and shells to make a fish stock. Separately, sauté zucchini, scallions, and carrot over high heat. Add some fish stock, the shrimp, vegetable broth, a small piece of ginger, and let it cook for about half an hour. At this point, add a bit of soy sauce and the noodles and bring to a boil.
Noodles in vegetable broth are excellent and simple: sauté a mix of julienned vegetables in a pan. They will be zucchini, carrot, and leek. If desired, add some pak choi or local chard. Let everything cook and also add a generous grating of ginger. If you like, also a tablespoon of soy sauce. Then cook the noodles and serve hot. Very often these dishes are served with good raw scallions cut into julienne. Don’t hesitate to do it too if you like!
Now let's delve into the recipe for noodles in broth with egg. The recipe is very simple: in this case, a vegetable broth is prepared: the Chinese touch is given by adding scallions, ginger, and, if desired, soy sauce. Separately, hard-boil the eggs, which will be added at the end. Now add the noodles to the broth and when they are cooked, serve them with the hard-boiled egg cut in half and some good raw scallions.
Noodles with miso are a truly delicious dish. To prepare them, you need to start with a good chicken or vegetable broth (made with celery, carrot, and onion). Separately, you will need to marinate diced tofu with soy sauce, sugar, and ginger. Sauté everything well in a pan until it is nicely browned. Add cooked and well-drained spinach to the broth and the noodles, which you will cook for about 14 minutes. Finally, add the tofu and the miso paste dissolved in hot water. Finish by serving the soup with the addition of some julienned vegetable sticks, choosing between scallions and carrot.
