Preparation

For Easter, every family in Frosinone prepared their own "pigna". It is a leavened sweet, shaped like a braid, made from a very worked dough of eggs, white flour, melted butter, sugar, milk, and allowed to rise for a long time in a warm environment. Once, to prepare this sweet, natural yeast was used, the same used for making bread. Today, powdered yeast is used. Therefore, place the prepared braided dough on a buttered and floured baking sheet and bake in a medium oven (180°C) until the surface is golden. A few minutes before serving at the table, dust the pigna with vanillin and place the traditional peeled hard-boiled egg in the center of the table.
