The fame of radicchio dates back to the Greek and Latin civilizations, where it was used to treat some health ailments, not least insomnia, as well as being used for the preparation of coffee. In Veneto, radicchio itself represents a truly typical product, which only became an economic resource starting from the fifteenth century, since previously it only grew spontaneously, especially outside the territory adjacent to the city of Treviso.
Use in cooking
Radicchio, in the kitchen, is used both cooked and raw, also using cheeses or other ingredients to create first or second courses.
Preservation
To preserve radicchio in the best possible way, you must take care not to wash it in any way, placing it in the refrigerator, where it lasts for five days.
Curiosity
According to tradition, radicchio was "invented" by a botanist, Francesco Van Den Borre, who blanched chicory.
