Preparation

Mix the mince well with the egg, the two cheeses, the slices of bread soaked in milk (liquid squeezed out), salt and pepper. Roll out the mixture on a sheet of baking parchment to form a rectangle. Place some mortadella, a couple of Kraft cheese slices or other melting cheese, and some cooked and well-drained vegetables, such as spinach, cabbage or broccoli. Roll it up with the help of baking parchment to make the classic shape of a meatloaf. Add some butter and bake at 180°C for 30 minutes. Meanwhile, wash the new potatoes, cut them into pieces and rinse. Boil for 5 minutes in salted water. When the half hour is up, switch the oven to its grill function and add the potatoes. Aim for an additional 20 minutes of cooking time, half-way through which the meatloaf should be turned over so as to brown it evenly. Serve.

Can Stuffed Meatloaf be Frozen?

Yes, stuffed meatloaf can be frozen without any issues. It is advisable to do so before cooking, wrapping it well in plastic wrap or in a food bag, to prevent it from absorbing odors from the freezer. In this way, you can store it for up to three months. When you decide to cook it, simply thaw it in the refrigerator for a few hours or overnight and then proceed with baking it in the oven. If you prefer, you can also freeze already cooked portions, ready to be reheated later. This convenience makes stuffed meatloaf an ideal solution for quick and tasty meals during the week.
