Ingredient

coriander

Although it may resemble parsley in some ways, coriander is actually not a very common ingredient originally in traditional Italian cuisine. In particular, on the Asian continent, the leaves and fruits of coriander are also used, whose flavor is particularly sour. Among the most interesting properties of coriander are certainly those of regulating intestinal activity, in particular to combat digestive difficulties, as well as to relax the body in case of feelings of exhaustion. Coriander is used as an ingredient in several sauces, such as Indian garam masala, as well as in vegetable dishes, liqueurs and sausages.

Use in cooking

Among the most common preparations in which coriander finds space, we find in particular sausages, different types of liqueurs and, finally, also in dishes based on different vegetables.

Preservation

Coriander should be stored in a container that protects it from the air, to prevent it from oxidising: it must be particularly avoided that it comes into contact with light and humidity.

Curiosity

According to the Roman scientist Pliny, it was customary - in Ancient Rome - to place coriander under the pillow, during sleep, to prevent fever and soothe headaches.
