Chicken croquettes are one of those meals that you should always bear in mind, especially if you have kids in the house. It is a tasty and delicious way to get children to eat some humdrum chicken. Make a good quantity of them, put them on the table in a lovely basket and let everyone serve themselves and eat with their hands. It’s healthy, delicious and fun too!
Bone the chicken and cut into cubes. Put it in a blender or food processor and blend to a paste. Add the parmesan, parsley, the bread soaked in milk and then drained, and salt and pepper. Blend again. With this dough, shape by hand into croquettes, dip them in the beaten egg and then coat in the breadcrumbs. Fry or bake at 200 °C for 20 minutes.
