Preparation

Bone the chicken and cut into cubes. Put it in a blender or food processor and blend to a paste. Add the parmesan, parsley, the bread soaked in milk and then drained, and salt and pepper. Blend again. With this dough, shape by hand into croquettes, dip them in the beaten egg and then coat in the breadcrumbs. Fry or bake at 200 °C for 20 minutes.

Tips
If you want to make your croquettes even more delicious, add any other ingredients you fancy, like meats or cheeses. These croquettes are excellent fried, but they are also delicious prepared in the oven. In this latter way, you will have a slightly healthier version of the dish.
