Pound 3 cloves of garlic in a mortar, add 1 teaspoon of paprika powder, 1 teaspoon of salt, the juice of 1 lemon, and 1/2 glass of olive oil. With this sauce, marinate 1000 g of well-aged wild boar rack. Place the rack in a baking dish with 20 g of lard and put it in a preheated oven at 180 degrees for 20 minutes, basting occasionally with a little white wine. Lower the heat and let it cook for 30 minutes. Slice and serve hot with roasted potatoes and boiled peas.
