Parisian pizza

Known as ‘pizza alla parigina’ or simply ‘parigina’, this pizza is a specialty savoury dish from the Gulf of Naples. In Naples, in fact, the ‘parigina’ is well known and very common: you can find at any delicatessen or bakery in the city, to enjoy there and then or to take home for a delicious lunch. Or, alternatively, you could learn how to make it at home: don’t worry, it's really easy! Simply prepare a common pizza dough and then add a few other ingredients. The outcome is delicious!

Preparation

Prepare the pizza dough a few hours before turning to the preparation of the pizza proper. When the dough has risen, roll it out on a baking tray lined with baking parchment. Top with a generous dose of tomato sauce. Add the ham and provolone cheese. Then add a little more tomato sauce and cover with ready-made puff pastry. Bake at 230 °C for 25 minutes.
