gorgonzola

Gorgonzola is a soft, raw cheese which is particularly characterized by the presence of marbling, those unusual and particular green veins, due to some peculiar moulds. The history of this Lombard cheese is rather strange, as legend has it that it was born from an oversight of a lover who, spending time with his girlfriend instead of working, found himself combining the curds from the previous evening with that of the same day, creating an unusual cheese. There are two different varieties of gorgonzola, one sweet and the other spicy.

Use in cooking

In the kitchen, it is customary to use gorgonzola in the following ways: first of all, as a cheese to eat on its own, or again, it is spread on slices of bread, it contributes to the preparation of tasty first courses based on rice, as well as second courses based on vegetables .

Preservation

You can store the gorgonzola in the refrigerator, with a layer of film, inside an airtight container. Alternatively, you can freeze it in slices.

Curiosity

According to an ancient legend, the preparation of gorgonzola happened by chance: a lover, lingering with his girlfriend, forgot to complete the work. So, he added the morning's curd to the previous day's curd: thus this cheese was born.
