Green peppers are certainly among the protagonists of the Italian summer, since they make their appearance on vegetable stalls generally during June: among the various colors offered, the green ones are among the most loved for the preparation of fresh salads. But what is this particular color due to? Although at first glance it might seem like a difference in variety, the various colors of the peppers are instead due to the level of maturation reached by them: the green ones are among the least ripe.

Use in cooking

Green peppers can be used in particular to create refreshing salads during the summer period.


Green peppers can be stored in the refrigerator, in the vegetable drawer, for a few days: alternatively, you can choose to put them in vinegar or oil.


Although one might believe the opposite, in reality, the color of peppers does not depend on whether they are of other varieties, but rather on their level of ripeness.
