Preparation

Let's start by making the meatballs by mixing the meat with the egg, salt, grated cheese (30-40 grams is enough), parsley, basil, half a clove of garlic, and stale bread. We work everything well and then form small meatballs. In a terracotta pot, we add a drizzle of oil and half a clove of garlic, then add all the meatballs and briefly stir with a wooden spoon. Next, we add the tomato sauce, which should ideally be homemade. We adjust with salt and cook until we achieve a sufficiently thick sauce. We dice the vegetables and fry them in hot oil. We drain them, place them on absorbent paper, salt them, and set them aside. We break the ziti into 3 parts and cook them in boiling salted water. Meanwhile, we cut the soft cheese into very small pieces. We prepare the béchamel as usual, first making a roux with butter and flour, then adding the milk and whisking well, followed by adding salt and nutmeg to taste. We drain the ziti and quickly rinse them under cold running water. At this point, we assemble the timbale. We butter a baking dish, lightly coat it with sauce, and arrange half of the ziti neatly in a row; we add the sauce with half of the meatballs, grated cheese, cheese, crunchy vegetables, then more ziti, sauce with meatballs, cheese, béchamel, and finally grated cheese. We bake at 200 degrees in grill mode for half an hour.
