Among the tastiest and most inviting buds, capers occupy a place of honor for their pleasantly salty taste, which is perfect for giving an extra touch of flavor to sauces for first and second courses, as well as in salads, as happens particularly in their land of origin, Sicily. On the market, capers can be found preserved either in oil, in vinegar or even in salt: the latter probably represents the best solution for preservation, as it does not alter their characteristic flavour.
