Pasta with a salmon, courgette and pea sauce

Today's recipe is a very light and healthy dish: conchiglie pasta made from spelt wheat, with a salmon and sauteed vegetable sauce. We chose to use courgettes and peas, thereby creating a colourful dish as well as one that is very healthy due to the pasta and salmon. As for the type of pasta, our suggestion is to use one made from spelt wheat which is high in fibre and thus very healthy. If you are not keen on such an unusual flour as the basis for your pasta, you can always use a common wheat pasta.

Ingredients

  • short pasta 200g of conchiglie made from spelt wheat
  • salmon 100g of smoked salmon
  • courgettes 50 grams
  • peas 50 grams

Preparation

Boil the pasta in salted water. Rinse the courgettes and cut into rounds. Sauté in a pan, then add the peas. Add the salmon and continue cooking in the pan. Drain the pasta and mix with the sauce in the pan, finishing with a little extra virgin olive oil.

Tips
For this recipe you could use either smoked or fresh salmon: with either the result will be equally delicious
