Salmon tagliatelle

Tagliatelle with salmon has a mild, refined flavour, because in addition to the salmon we use fresh cream to give a luscious texture and that extra depth of taste. The recipe is very simple to make and needs very few ingredients: salmon - you can use either smoked or fresh, or a mixture of the two - and fresh cream. Preparation

Put the egg tagliatelle on to cook. Warm some fresh cream in a saucepan. Bring to the boil and add salt and pepper. Cut a fillet of salmon into strips. Once cooked, mix the pasta with the hot cream and add salt. Serve the pasta in the middle of a plate with a little pile of smoked salmon on top, cut into strips.

Tips
To serve this dish, put the tagliatelle on a serving dish and add lots of freshly chopped parsley. Also, we recommend drinking a classic white wine with it, cool and sparkling like the Verdicchio dei Castelli di Jesi.

Salmon is increasingly appreciated for its health giving properties because it contains omega-3, a category of essential polyunsaturated fatty acids which can prevent heart disease, and increase the value of HDL which can lower cholesterol.
