Rice-based first courses, particularly pumpkin risottos or other similar delicacies, could not be prepared correctly, with a pleasant result from the taste point of view, unless using a particular variety of rice, that del vialone, a fruit and vegetable product of Veronese origin which, in Italy, enjoys a large number of admirers due to its particular properties, including the small size of the grains - up to 6 millimeters large - plus the release of starch during cooking, a fundamental characteristic for the success of a good risotto.
