Salmon is full of health benefits: it provides a good source of Omega 3 Fatty Acids, which increase the brain function enhancing its performances (it's perfect for students as well as for old people), avoid cardiovascular problems and protect the eyes from degeneration. Moreover, salmon contains a high percentage of vitamin D, which is crucial to defend our body from cancer, sclerosis, cardiovascular diseases and arthritis. Finally, salmon contains tryptophan, a natural sedative which, being a natural sedative, ensures a good sleep and helps people which suffers from insomnia.
Crush the almonds in a morter together with a pinch of coarse salt. Fillet your salmon (unless you don't buy ready fillets of slices of salmon). Once your salmon is cut, press it into the salmon and salt mixture. Press lightly to adhere. Arrange salmon in a non stick pan for 30 second per side. Cook until salmon will be cooked through and opaque in center. Serve with reduced balsamic vinegar.
