Baked fruit cheesecake

The cheesecake is a dessert of American origin made of a biscuit base covered with a layer of soft cheese mixture and topped with fruit or jam. The variants of this famous dessert are legion, both baked and un-baked. There are some with gelatin and some without, and there are versions with cream, mascarpone, ricotta, Philadelphia cream cheese, and many more. Even regarding the toppings there are various options: you can finish off your cheesecake with fresh fruit or with jam. Our version is baked, made with Philadelphia cream cheese and fresh fruit. Ingredients

  • biscuits 300g dry digestive biscuits
  • butter 150 grams
  • cheese 400g of Philadelphia cream cheese
  • plain flour 80 grams
  • eggs 1 unit
  • milk Two tablespoons of milk
  • sugar 150 grams
  • fruit Fruit of your choice

Preparation

Melt the butter and mix it with the chopped up biscuits. Line a cake tin with baking parchment. Spread the biscuit mixture over the bottom of the tin. Put in the fridge to rest. Preheat the oven to 170°C. Beat the cream cheese with the sugar, then add the egg, flour and milk. Take the biscuit base, spoon over the cream cheese mixture and level it off. Bake for 30 minutes. Allow to cool, then decorate with fresh fruit.

Tips
Don't add butter to your cream cheese mixture: there's plenty in the biscuit base!
