Preparation

Prepare the batter: put the milk in a bowl, add the beer, brewer’s yeast, an egg and salt. Cut the white sandwich bread so as to make 4 rectangular sandwiches. Fill the sandwiches with mozzarella, radicchio and anchovy. Soak the sandwiches in the salty milk and then dip in the batter. Fry the sandwiches in hot oil until they are golden brown. This Venetian classic, as revisited by our chef, is ready.

Tips
It would be great, for the best results, if you could get hold of some buffalo mozzarella. And it’s better not to use fresh bread for sandwiches because it might fall apart; use stale bread instead.
Trivia
It is said that the recipe derives from the desire to use up mozzarella left over from previous meals.
