Preparation

Put the peeled hazelnuts into the bowl of a food processor and blend until you get smooth paste. Put the milk, the vanilla and the small pieces of broken chocolate, together with the hazelnut paste, in a bain-marie (or in a bowl over gently simmering water) and melt the chocolate. Mix in some corn oil and melt it all together. Sift in the icing sugar and add to the mixture of hazelnuts and chocolate, stirring with a whisk. Pour the hazelnut cream whilst still warm into a 250 ml jar and allow to cool before storing in the refrigerator for at least 6 hours.
