If you master the basic cooking techniques you can also balance perfectly the innovation and tradition, creating good dishes, tasty and appealing at the same time. And, what's more, one of the secrets of happy life is giving yourself continuous small treats. Choose seasonal ingredients, which flavour is at their best. So, after having bought these wonderful asparagus, we've decided to make this appetizing sauce, fresh and original, light and tasty.
Rinse your asparagus under clean running water and take off the outer layer with a vegetable peeler. Cut off the tips, boil them and keep these aside for garnish. Chop the rest of the stalks and sautee them with one finely minced onion and one handful of capers quickly rinsed and coarsely chopped. Add salt if needed. Once everything is soft, add milk and brie cheese and bring to simmer. Place your pasta in a large saucepan with boiling water and cook it until al dente. Drain the pasta when done, and mix it with the cheese sauce. Garnish with the asparagus tips, a sprig of basil and serve hot.
