Courgette burgers are delicious patties, perfect for the whole family - and they'll keep vegetarian guests happy too! Their flavour will amaze you! Prepare them in large quantities because they will go like hot cakes. For children, serve them in a bun; for grown-ups, alongside a salad.
Cut the courgettes into quarters lengthwise and then into small pieces. Take a frying pan and heat a little oil with a clove of garlic, being careful not to let it burn. Add the courgettes and sweat them for about ten minutes. Then transfer them to a bowl and add the breadcrumbs, Parmesan cheese, egg (don't add all the egg white at once in case the mixture becomes too wet), salt, pepper and chopped fresh mint. Mash it all together with a fork and then shape your burgers. Cook in frying pan for a few minutes, turning halfway through.
