This courgette pasta bake is a really light and healthy dish. It does not involve a fried base of vegetables such as onions, nor the inclusion of béchamel sauce. Instead, it includes a generous helping of grated courgette, making it both clever and healthy. If you don't know how to get your children to eat courgettes, for example, this is the perfect answer: they won't be able to resist a steaming dish of succulent baked pasta - they'll devour the whole thing, even if it is full of greens!
Dice the pancetta and fry in a little extra virgin olive oil. Add the grated courgette, adjust the salt and cook for about ten minutes. Cook the pasta until al dente. Drain the pasta and mix with the pancetta and courgette sauce. Add the mozzarella and the parmesan. Mix well. Place everything in a baking dish and finish with a layer of sliced scamorza cheese. Cook under the grill for 10 minutes.
