On a scorching summer afternoon, the aroma of fresh sardines mingles with that of wild fennel, creating a festive atmosphere that fills Sicilian kitchens. Pasta with Sardines represents a perfect union between the sea and the land, a dish that plays with the sweetness of sultana raisins and the bold flavor of anchovies, giving rise to a harmony of tastes that tells the gastronomic tradition of the island. The cooking technique, which involves sautéing the fennel with onions and sardines, enhances the aromas and blends the flavors, creating a dense and fragrant sauce that pairs perfectly with the pasta. This recipe has ancient origins, tied to the traditions of fishermen and farmers, and has evolved over time, with local variations that may include the addition of toasted almonds for a crunchy touch. Pasta with Sardines is an ideal dish for a summer family lunch, to be served with a side of fresh salad or as a main course at a dinner among friends, accompanied by a good white wine. Preparation

Boil the wild fennel in salted water, drain it, and reserve the water for cooking the bucatini. Remove the bones and heads from the sardines. In a pan, sauté the chopped fennel with onion, desalted anchovies, a bit of pepper, pine nuts, saffron diluted in a little water, and the sultana raisins soaked in warm water, then add half of the sardines. Once the sardines are browned, mix everything until you achieve a homogeneous sauce. Cook the bucatini in the reserved fennel water. Drain them al dente and place them in a baking dish with two-thirds of the sauce, mixing well. In a pan with a little oil and the remaining third of the sauce, cook the remaining sardines. Pour everything over the bucatini and sprinkle with chopped almonds. Place the baking dish in a very hot oven for about ten minutes to gratin the contents.

Tips
If you want to enhance the flavor of the sardines, make sure to use fresh fish and carefully remove the bones, to make the dish more tasty and enjoyable to eat.
