Every season holds special surprises and gives you the possibility to enjoy the unique taste of early products. These gratin artichokes will be even more tasty if you'll buy your artichokes during their harvest time.
Clean you artichokes and, in order to slow oxidation, dip them in acidulated water. Mix breadcrumbs, parsley, garlic, capers, pecorino cheese, salt, olive oil and wine. Stuff your cleaned artichokes, arrange them on a baking tray with a ladle of water, then bake them at 180° for 40 minutes, grilling them during the last 5 minutes.
