Cut the chicken breast into chunks 4cm long, 2cm wide and 2cm thick. Salt them lightly. Whisk the eggs in a bowl and lightly salt them. Crumble the crisps and transfer to a separate bowl. Dip the pieces of chicken in flour, then in the beaten egg and finally in the crumbled crisps. Make a sauce by mixing the chopped the parsley, crushed garlic and mayonnaise with a dash of lemon juice. Heat some oil in a frying pan and fry the coated chicken pieces.
