Simple sweet pepper stew

Ingredients

  • garlic 1 clove
  • yellow peppers 1 yellow pepper
  • tomatoes 4 fresh tomatoes
  • oil 4 tablespoons of olive oil
  • salt To taste
  • red peppers 1 red pepper
  • basil A few basil leaves

Preparation

Wash the peppers, cut them in half and remove the seeds. Cut lengthwise into lots of strips. Lightly brown the garlic in the oil for a few minutes, add the peppers and cook for about 15 minutes to soften them. Mix in the washed halved tomatoes, cover with a lid and cook for 10 minutes. Remove the lid, add salt and reduce most of the liquid. Moments before removing from the heat, add the chopped basil. Serve immediately accompanied with slices of bread.

Tips
Serve the dish with a soft, chilled wine which will go perfectly with the flavour of the peppers and tomato. We propose a Cabernet Sauvignon! Try serving the peppers as a simple sauce to mix with pasta. The taste will be exceptional!
Trivia
Sweet peppers are rich in copper, iron, potassium, zinc, manganese, selenium and magnesium; but that’s not all, because these vegetables are rich in vitamin A. In addition, red and green peppers contain vitamin C, an antioxidant of some significance.
