As you all know, the king of Piedmontese gastronomy is rice. The paniscia is very famous, a very rich and tasty risotto, typical of the Novara area. The area of the rice fields par excellence is Vercelli: here the risotto is prepared with frogs, with gorgonzola, with snails and with beans.
