Cut the mozzarella into slices and the courgettes into thin slices. Cut the loaf into two longwise. Arrange the mozzarella onto the bread and then add layer of raw courgette. Add the roast beef on top of the courgette. Add the mayonnaise and mustard on top of the roast beef, and salt lightly.
