Preparation

Prepare a well-emulsified lemon dressing. Peel the outer part of the celeriac. Cut into thin slices and place in a bowl. Mix the celeriac slices in the lemon dressing and let them marinate for half an hour. You can serve them on their own, along with some crudités or as a side dish for grilled meats.

Tips
Don’t underestimate how important it is to use good quality lemons to get the juice for the preparation of the lemon dressing; and, once ready, pour this dressing onto your celeriac straightaway.
Trivia
The lemon dressing is, in some ways, reminiscent of a vinaigrette: in the latter case, however, you use vinegar instead of lemon.
