Noodles in broth

Noodles are an ancient and very common dish throughout the world. It is a gastronomic specialty of Asian and oriental cuisine, which in some ways recalls our spaghetti or linguine. Around the world, depending on different cultures, various types are found; we range from rice noodles, very thin, white and usually pre-cooked, to egg noodles from China or Japan, up to ramen, instant noodles, udon noodles, which like rice noodles must be soaked, and Thai noodles. Today we also wanted to prepare a recipe with noodles, using beef broth and excellent seasonal vegetables.

Preparation

Prepare a meat broth with good chicken meat. Also add some celery, carrot, spring onion and grated ginger. Then add the mushrooms and pak choi or chard. When everything is well flavored, add a couple of spoons of soy sauce and the noodles. When the noodles are cooked, serve with a few strings of raw spring onion for garnish.

Tips
Always read carefully what is written on the packaging and the ingredients of the noodles. Unlike our pasta, noodles often already contain salt in the dough. So be careful not to over-salt any condiments or broths.
Trivia
Noodles are a very ancient dish: it seems that, near the archaeological site of Lajia, in China, "remains" of noodles over 4 thousand years old have been found.
