Scallop gratin

There is no better way to start a meal where fish is the main ingredient: make sure you don’t forget to buy some lovely, good quality, light white wine. Preparation

Open and clean the scallops. Prepare a gratin following our basic recipe. Place the scallop in one of its shells and cover with the gratin mixture. Do the same with all the other shells. Arrange in a baking dish and put a knob of butter on each. Bake at 180 °C for 15-20 minutes.

Tips
To add yet more flavour to your scallops you can soak them briefly in cognac.
