⏱ 10 min👤 4 pp★☆☆☆☆

During the holidays, when the aroma of freshly baked sweets fills the air, Royal Icing emerges as a key element for decorating and making our desserts special. This preparation, with its smooth and shiny consistency, is made from a simple yet effective mix of powdered sugar and egg white, enriched by a fresh note of lemon juice that makes it irresistible. Its versatility is surprising: it can be used to coat cookies, cakes, or cream puffs, giving them an elegant and refined appearance. Although the origins of this icing are not tied to a specific Italian region, it is widespread throughout the country, with various adaptations to local traditions. For example, in some areas, flavors like vanilla or cinnamon are preferred, while in others, food coloring is used to create vibrant and festive decorations. Royal Icing is perfect for special occasions, such as Christmas or birthday celebrations, but it can also transform a simple dessert into a grand occasion treat. The technique of whipping the egg white with powdered sugar is fundamental: it allows for a stable and shiny consistency that retains its shape even after decoration. This makes the icing not only an aesthetic element but also practical, as it dries quickly, setting perfectly on the sweets. By using fresh and quality ingredients, each preparation becomes a unique experience, capable of surprising and delighting anyone who sits at the table. With Royal Icing, every dessert transforms into a masterpiece to be savored and admired, making each bite a moment of pure sweetness.

Preparation

The amount of powdered sugar listed in the ingredients is purely indicative, as it depends on the volume of the egg white used and should be adjusted accordingly. Place 170 g of sugar and the egg white in a bowl, flavor with lemon juice, then whisk the ingredients together with a whisk or an electric mixer; you will add the rest of the sugar when the mixture is smooth and soft. Continue to work until the icing reaches an optimal consistency, that is, when the circles left by the whisk are evident on its surface. At this stage, immediately cover the bowl containing the icing with a damp cloth to prevent the surface from drying out.

Tips
If you want to achieve a smooth and homogeneous icing, make sure to add the powdered sugar gradually and continue to work until you see the circles left by the beaters on the surface.
Trivia
Royal icing is a type of sugar-based decoration with ancient roots, used in pastry to adorn cakes and cookies. It is particularly popular in Christmas traditions and weddings.
