Umbrian gastronomy is a meat gastronomy, in particular game and pork. The meat is accompanied by simple and rustic ingredients, such as potatoes and legumes (spelled and lentils on the head). The truffle is another of the undisputed protagonists of the Umbrian cuisine. Like many other regions of Italy, Umbria is a strong producer of extra virgin olive oil.
