Puglia is a very long region! Its territory is almost completely covered with olive trees, from which an extraordinary extra virgin olive oil is obtained. For the rest, Apulian gastronomy is a very simple and 'poor' gastronomy, based on the products of the earth, such as vegetables. Vegetables are tasted and prepared in every way. The fresh pastas are very present, which are prepared here only with water and flour: the orecchiette are very famous, in their version with turnip greens, but also with meat sauces. The cheeses are amazing: we have scamorze, caciocavallo, marzotica ricotta and much more!
