Veneto is a truly unique region: it is located in a happy triangle of mountains, sea and Lake Garda. Its gastronomy is therefore affected by this triple influence, and not only. Over the past centuries, since Venice was the Maritime Republic, Veneto had commercial relations with the Far East, but also with Northern Europe. The result, it goes without saying, is a gastronomy really rich in flavors and influences of various kinds. Among the most famous dishes we mention the bigoli, tasty thick spaghetti often seasoned with an anchovy sauce, with a sauce or with other sauces; risi e bisi, or rice with peas, the many recipes based on radicchio di Treviso or Chioggia, and then the 'saor', a delicious dish based on fried sardines in carpione. Another cornerstone of Venetian gastronomy is cod, highly appreciated in its Vicenza-style version or creamed. The desserts are also famous, such as the Carnival pancakes, and then the fregolotta and other irresistible desserts.
