Preparation

The ingredients in question are suitable for a mold with a diameter of 35 cm. Combine in a bowl the water, pepper, yeast, a pinch of pepper, and powdered brewer's yeast. Add the lard and then incorporate 1 kg of flour. Knead well and let it rest covered with plastic wrap. Roll out the dough into an oval shape and then brush with lard, adding cubes of Grana cheese and Parmigiano Reggiano, raw ham, cooked ham, salami, coppa, Neapolitan cracklings, and chopped hard-boiled eggs. Roll the casatiello and join it in a ring shape, placing it in a greased baking pan with lard and then brush with a beaten egg. Create holes with your knuckles where you will place well-cleaned hard-boiled eggs and secure them with strips on top. Cover and let rise for a whole day. Bake in a static oven at 160°C for about 1 hour until golden.
