Preparation

Let's soak the sheets of gelatin in cold water, making sure to set aside half a sheet for the coffee jelly. Prepare the coffee and set it aside. Heat the cream in a saucepan, add the milk and sugar, mix well, and cook without boiling. When the mixture is homogeneous and the sugar is dissolved, add 100 ml of coffee. Mix well, remove from heat, then add the well-squeezed gelatin and mix again. Using a strainer, pour the dessert into the chosen glasses or molds. Place in the fridge. Then, dissolve the half sheet of gelatin that was set aside in cold water; squeeze it well, then add it to the coffee that we set aside. Mix well and let it rest. Place the freshly prepared jelly in the fridge to rest and thicken. When ready to serve, roughly break the jelly with the help of a teaspoon and use it to decorate the surface of the panna cottas. Serve immediately well chilled.
