After preparing and tasting many delicious and rich recipes, maybe having taken a great deal of care over flavours that are nicely balanced, sometimes we have to stop and eat something light and nutritious, allowing us to stay in shape, cleanse our body, and at the same time continue to delight our guests, including vegetarians. What could we have on offer for you today? Well, it’s a delicious main course from Asia, and China in particular: rice noodles, presented as a vegetarian dish, perfect for all those who crave something light and healthy. We don’t need to worry about the lack of nutrients: our noodles will include a small omelette, which not only gives the dish a little extra flavour, but also gives it a bit of colour and originality.
Make a little omelette with two beaten eggs and a pinch of salt. Chop it up and set aside. Soak two nests of rice noodles in warm water. Meanwhile fry some white onion in a frying pan with a clove of garlic. Then add all the washed vegetables, peeled if necessary, and cut into small pieces. Fry everything over a high heat to keep the vegetables crunchy. Sprinkle with a tablespoon of soy sauce. Set aside the vegetables. Drain the rice noodles and transfer them to the pan. Sauté briefly, adding the chopped up omelette to the vegetables, and two tablespoons of soy sauce.
