Preparation

Make a little omelette with two beaten eggs and a pinch of salt. Chop it up and set aside. Soak two nests of rice noodles in warm water. Meanwhile fry some white onion in a frying pan with a clove of garlic. Then add all the washed vegetables, peeled if necessary, and cut into small pieces. Fry everything over a high heat to keep the vegetables crunchy. Sprinkle with a tablespoon of soy sauce. Set aside the vegetables. Drain the rice noodles and transfer them to the pan. Sauté briefly, adding the chopped up omelette to the vegetables, and two tablespoons of soy sauce.

Tips

Additional Information

Vegetarian rice noodles are a tasty and versatile dish, perfect for those looking for a light, gluten-free alternative to traditional pasta. But what do rice noodles contain? Rice noodles are primarily made from rice flour and water, making them suitable for people with gluten intolerance. Sometimes, they may contain small amounts of tapioca starch or other additives to improve texture, but they are essentially a very simple and natural product.

What do rice noodles contain?

Rice noodles, being made mostly from rice, are a source of complex carbohydrates. They also contain a small amount of protein and virtually no fat. They do not provide a significant amount of vitamins or minerals, so it is important to pair them with vegetables, legumes, and other sources of nutrients for a balanced meal.

How to substitute rice noodles?

If, for some reason, you do not wish to use rice noodles, there are several alternatives. For example, you can use soy noodles, which are very similar in texture but made from soy flour and thus have a higher protein content. Other options include zucchini noodles or other vegetable noodles, which offer a low-carb variant, or konjac noodles, known for their extremely low calorie content.

How many rice noodles can you eat on a diet?

When following a diet, the amount of rice noodles to consume depends on individual caloric and nutritional needs. Generally, a portion of about 50-80 grams of dry rice noodles (which doubles in weight once cooked) can be a reasonable starting point. It is important to consider the rest of the meal: pairing them with vegetables and proteins can help create a filling and nutritious dish without exceeding calorie limits.

What is the difference between rice noodles and soy noodles?

The main difference between rice noodles and soy noodles lies in the ingredients used and the nutritional profile. Rice noodles are made with rice flour and water, resulting in a light and translucent texture once cooked. Soy noodles, on the other hand, are made with soy flour, making them richer in protein and slightly more substantial. Additionally, soy noodles may have a more pronounced flavor compared to rice noodles, which tend to be more neutral and absorb condiments better.

Vegetarian rice noodles are therefore an excellent choice for those seeking a light and versatile meal, easily adaptable to various dietary needs and personal tastes. Knowing the answers to common questions about this food helps to use it optimally in your daily diet.
